It is raining and fall-like, so I'm breaking out my favourite veg chili recipe that I haven't made since last year. It's from the "How It All Vegan" cookbook, and I looooooove it. Easy, hearty, good to bring to work for lunch.

Sarah's Delicious Chili

1 med onion, chopped
2 med carrots, chopped
1 Tbsp olive oil
3 1/2 c. cooked or canned kidney beans (I use 1 can, don't bother measuring in cups)
1 28-oz. can diced tomatoes (3 1/2 c.)
6 oz. tomato paste
2 1/2 c. cooked or canned chickpeas (I use 1 can, minus a handful that I keep for salad later!)
8-12 mushrooms, chopped
1 12 oz. can of corn (1 1/2 c.) (I use frozen, 'cause I usually have it around, and just pour a bunch in)
3/4 c. uncooked rice (I use brown)
1-3 Tbsp. chili powder (I usually use around 2, which makes it not too spicy)
1 Tbsp pepper (or, just a whole bunch of grinds of my pepper grinder, 'cause I don't have ground pepper)
2 Tbsp curry powder
2 c. veg stock or water

In a large pot, saute the onions and carrots in oil on med-high heat until the onions become translucent. Add everything else and stir together. Simmer on med-low heat for 40-60 minutes, stirring occasionally. Makes 6-8 servings.

I have it on the stove right now--today, for the first time, I added about 1 Tbsp of cocoa powder, as I've read that some chocolate makes chili richer and more awesome. It certainly smells good!

Awesome! I might give this a try this fall. I've tried lots of chili recipes, and they're all fine, but I haven't picked a fave yet. I look at vegan/veg recipes for the health factor, so this is great.

SFD is looking for one-pot meals - this sounds good! (Except for the vegan part, heh.)

It is good! I had it for dinner yesterday, and tonight, and have enough left for probably 3 or 4 lunches this week. I may get bored by then, so I'll freeze some for later.

I forgot to add that I find it needs salt. I always mean to add some when it cooks, but always forget, so I definitely add a bit of salt at the table.
